
Winter is the perfect time to eat steaming hot bowls of chili. It’s one of my favorite foods because it’s cheap, low-carb, low-fat, and WARM, which is important in December! It’s also great to bring to potlucks or to serve at holiday dinners.
Here’s my favorite chili recipe:
Ingredients:
– 1 lb. lean ground beef or lean ground turkey
– 1 can kidney beans
– 1 red onion
– 1 red bell pepper
– 1 jar of salsa or taco sauce
– 5 garlic cloves
– Cayenne pepper and cumin to taste
– Hot chili peppers (optional!!)
Directions:
Step 1: Dice the onion, garlic, red pepper, and the optional chili peppers.
Step 2: Cook diced onion, diced pepper and beef/turkey in a saucepan about 8-10 minutes, until it’s browned.
Step 3: Add jar of salsa or taco sauce, cayenne, cumin, chili peppers (optional), garlic cloves, and one-fourth of a cup of water.
Step 4: Cover the saucepan and simmer on low for 10-15 minutes. Stir occasionally.
Step 5: Add the canned beans, simmer 2 more minutes or until the beans are warm.
Serve and enjoy! Optional: top with shredded cheddar, sour cream, scallions, raw onions or just about anything else you want.
